Ruby’s Carrot Cake
Cake:
2 1/2 cups flour, 1 tsp soda, 1 tsp salt, 1 tsp cinnamon, 2 cups sugar, 3 eggs, 1 tsp vanilla, 1 1/2 cups vegetable oil, 2 cups grated carrots, 1 cup crushed pineapple, 1/2 cup chopped nuts
Frosting:
1/4 cup butter, 1 tsp vanilla, 1 pkg cream cheese (4 oz), 2 cups powdered sugar
Sift together dry ingredients in a bowl and set aside. Cream together pineapple, eggs, vanilla, and oil. Add dry ingredients, mix until combined. Then fold in carrots, and nuts. Pour into 9×12 cake pan and bake at 350 degrees for 45-50 minutes or until a toothpick comes out clean. Remove cake from oven and cool completely before frosting. For frosting: cream butter, vanilla, cream cheese together. When light and fluffy add powdered sugar. Pour over cooled cake a spread evenly. This is my daughter Ruby’s favorite cake for her birthday.
Yummy Yams
Ingredients:
2 apples cored, peeled and sliced, 1/3 cup chopped pecans, 1/2 cup brown sugar, 1 tsp cinnamon,2 17-oz cans yams, drained, 1/2 cup butter, 3 cups miniature marshmallows
Toss apples, nuts, brown sugar, cinnamon, and yams in a large bowl. Spread into 9 x 11 baking dish and dot top with butter, cover with foil and bake for 35-40 minutes in 350 degree oven. Remove foil and spread marshmallows all over the top. Return to oven for 5 minutes or until marshmallows are all puffed up. I love this casserole! I seem to only make it on holidays but it is a delicious treat and I should make it more. My great nephew Ryle who is 2 loves it too, he calls it cake. HAHAHA.
Pecan Pie
Ingredients:
1 cup light corn syrup, 3 large eggs, 1 cup sugar, 2 tbsp butter, 2 tsp vanilla, 1 1/2 cups chopped pecans, 1 pie crust
Pre-heat oven to 350 degrees. Mix all ingredients in a bowl and then pour in pie crust. Bake for 50 minutes. Cool for 1hr before serving. I love this pie. I even have myself convinced its healthy. It has nuts and eggs, lots of protein! HAHAHA I have added 1/2 cup chocolate chips and a shot of Bourbon to this recipe, to make it even more rich.
Leftover Ham & Beans
Ingredients:
1 1/2 cups ham, 4 cups lima beans, 1 small yellow onion, 4 cups chicken broth, 1 tsp cumin, 1 tbsp minced garlic, 1 tsp black pepper, 4 tbsp butter,1 tbsp bacon grease (optional)
OK disclaimer! I usually make this when I have left over ham from a holiday, but you can make it any time. I take the left over ham and cut what I can up in small pieces. Add the ham bone and pieces to the crockpot if I am making it in the morning for dinner but if I have an hour I put it in a pot on the stove. Then I add the beans. You can use dried lima beans and pre-soak them or you can use canned lima beans and rinse and drain them. Then add remaining ingredients. If I know I am going to put this in the crockpot in the morning for dinner I make bacon for breakfast and add the grease to the crockpot also just for some extra goodness, but its not necessary. Cook in crockpot for 6-8 hours or if in a pot on the stove bring it to a boil then turn it down to med put a lid on it and let it simmer for 45 min and then stir it up and dish it up in a large bowl.
